Production Process

1. Cooking

Sugar, water, and starch mixtures are cooked in specially designed cooking kettles under controlled heat to achieve the desired gel structure.

2. Mixing & Flavor Addition

Flavors, colors, nuts, and fruit components are added during mixing to ensure homogeneous distribution throughout the batch.

3. Depositing or Slab Forming

The cooked mass is transferred onto trays or forming systems where product thickness is controlled.

4. Cooling & Conditioning

Products rest under controlled conditions to develop the characteristic soft and elastic texture of Turkish delight.

5. Cutting & Starch Coating

Automatic cutting machines divide the product into uniform cubes or customized shapes while preventing sticking.

6. Optional Chocolate Enrobing

Products can be coated with chocolate using compatible enrobing systems.

7. Packaging

Finished lokum is transferred to packaging machines for hygienic and efficient packing.
