Production Process
1. Sugar Cooking
Sugar and water mixture is cooked in controlled cooking kettles until the required caramelization level and viscosity are achieved.
2. Cooling & Dough Preparation
Cooked sugar mass is cooled and prepared into workable form suitable for fiber formation.
3. Flour Roasting
Flour is roasted in specialized roasting units to obtain the characteristic aroma and texture of pişmaniye.
4. Fiber Pulling & Forming
Sugar mass is stretched and layered with roasted flour through mechanical forming systems, creating the fine fibrous structure.
5. Portioning & Shaping
The product is divided into equal portions and shaped automatically or semi-automatically.
6. Optional Chocolate Coating
Products can be coated using chocolate enrobing systems for premium variations.
7. Packaging
Finished products are transferred to packaging machines for hygienic and efficient packing.
