Production Process
1. Fudge Cooking
Sugar, milk powder, butter or vegetable fats, and glucose syrup are cooked under controlled temperature to achieve the required creamy consistency.
2. Vacuum or Controlled Cooling
The cooked mass is cooled and conditioned to obtain the characteristic smooth fudge texture and prevent crystallization defects.
3. Mixing & Flavor Addition
Flavorings, cocoa, nuts, or inclusions are blended into the fudge mass using specialized mixers.
4. Forming & Slab Production
The fudge is deposited or extruded onto a forming conveyor and shaped into a continuous slab with adjustable thickness.
5. Cooling & Stabilization
The product passes through a cooling tunnel to stabilize structure and prepare it for clean cutting
6. Cutting System
Precision cutting units divide the slab into uniform bar dimensions while maintaining smooth edges.
7. Optional Chocolate Enrobing
Fudge bars can be coated with chocolate or compound coatings for premium confectionery applications.
8. Automatic Packaging
Finished products are transferred to packaging machines for hygienic and high-speed wrapping.
